Canada Day BBQ for Beef eaters, Vegans, and Vegetarians on CBC's Weekend Morning Show!

Happy Canada Day on July 1st!  While you are planning on your BBQ, remember the wonderful beef that we have here locally, as well as the vegans and vegetarians who will inevitably also wish to partake of the celebrations.  :)  
I am presenting the following dishes for CBC's Weekend Morning Show with Host Nadia Kidwai.  The lovely Sirloin Steak Beef from Manitoba Beef was perfect for kebabs. This is available on Saturday at St. Norbert's Farmer's Market as well as the quinoa from Tamarack Farms for the Quinoa Sweet Potato vegan burgers.  If you are looking to keep completely Gluten-Free, use their quinoa flour in place of panko.  The grilled eggplant is wonderful for so many events.  You can find locally grown eggplant now at Vic's Fruit Market on Pembina and at Schreimer's Greenhouses.

Bi-Coastal Canada Day Celebrations on CBC's Weekend Morning Show

On Saturday, I will be featuring the following dishes for easy and inexpensive Canada Day celebrations, on CBC's Weekend Morning Show with host Nadia Kidwai. Both the 3 good sized Red Snapper Fillets and the 2 lbs of PEI mussels, from Gimli Fish, cost just over $12.  Just over $5 for the Red Snapper Fillets.  Great deal and great flavours!
PEI Mussels in butter, Miso, and Sake
1 lb PEI mussels, available at Gimli Fish 1-2 tsp butter (I use the local Notre Dame butter) 2 tbs miso ( I use a sweet, light coloured miso, available in most stores, and in all Asian grocery stores) 1/4-1/2 cup sake 1/2 cup chopped green onions, with whites (these are from Heart's Acre Farm and are available at St. Norbert's Farmer's Market) chopped chilies or a drizzle of chili oil, to taste chopped cilantro (also from Heart's Acre Farm), try also their garlic scapes!
Scrub and clean off the mussels.  Only use closed mussels or ones that can close.

Ribeyes and Birch Syrup BBQ sauce for Father's Day on CBC's Weekend Morning Show

This morning on CBC's Weekend Morning Show with host Terry MacLeod, I presented the following ideas for a Father's Day BBQ with Manitoba Ribeye from Wildfire Farms, and incredible Birch Syrup BBQ Sauce from the Canadian Birch Company, both available readily at the St. Norbert's Farmer's Market.

Easy BBQ Feast for Father's Day! On CBC's Weekend Morning Show

Yesterday I had the joy of presenting some new ideas that I'm developing for the market, in time to enjoy for Father's Day, on CBC's Weekend Morning Show with host Nadia Kidwai.

The lovely beef striploin came from Wildfire Farms and the pizza dough is available on market days at Old Church Bakery.  Easy and delicious!  The rub is a Baharat (spice blend) that I've added ground pumpkin seeds and smoked paprika to to make a Manitoba version of Duq'qah, an Egyptian spice and ground nut blend for meats and flatbreads.  I'll be bringing this to market very soon.

For the flatbread, 1 bag pizza dough from Old Church Bakery, divide into 2-4 pieces and, with a bowl of water to wet the fingers, pull and spread onto a silpat or parchment papers.  Spread a spoonful of the Duq'qah onto each flatbread, sprinkle with a pinch of salt, and drizzle with olive oil.  Bake in a 450ºF oven or on a hot grill until done, 4-7 minutes, depending on oven or grill.

Father's Day made easy and delicious for CBC's Weekend Morning Show

Today on CBC's Weekend Morning Show with host Nadia Kidwai, I presented the following dishes to make Father's Day easy and delicious.  Many of the ingredients are found at the St. Norbert's Farmer's MarketSteak and Eggs with grilled asparagus. 

Steak and Eggs

1 ribeye steak per person  (wonderful ribeye steak from Wildfire Farms, and available at St. Norbert's Farmer's Market)
Dijon Mustard
Birch Syrup (very versatile Birch Syrup is available at St. Norbert's Farmer's Market from The Canadian Birch Company)
salt and pepper, to taste
olive oil, drizzles
1 egg per steak (Nature's Farm carries the most wonderful golden yolk eggs!  Available at St. Norbert's Farmer's Market)

Mix enough Dijon mustard and Birch Syrup to cover both sides of each steak.  Cover the steaks and let sit at room temperature until ready to grill, cool in the fridge if a longer period of time.

Herbed Pizzas for CBC's Weekend Morning Show!

This morning I presented some lovely local products for CBC's Weekend Morning Show with host Terry MacLeod.   

This artisan pizza dough from Old Church Bakery, is remarkably light.  It feels as though it would float away.  You don't need to roll it, just press it out with your fingers.

The fresh herbs are wonderful! Fertile Farm has wonderful products at the market.  Grilling the Spring Onions makes them mellow and sweet.  The Sorrel is so lemony, just divine!

Herbed Pizzas

1 bag Artisan Pizza dough (from Old Church Bakery, at St. Norbert’s Market)
olive oil
Spring Onions or Sorrel (from Fertile Farm, at St. Norbert’s Market)
Pesto of choice for sauce.  I’m using basil arugula today, also optional to use only olive oil, salt and pepper
Shaved or grated parmesan cheese

You can bake this on a BBQ grill, with or without a grill sheet.  The Pizza dough is so light, it doesn’t need rolling, just spread it out with your fingers.  Spread on olive oil or pesto to the base of the pizza and top …

Spring Produce on CBC's Weekend Morning Show

Tomorrow, I will be presenting these dishes on CBC's Weekend Morning Show with host Nadia Kidwai.  The produce is local and in season now, for the best flavours.  You can also enjoy fresh local produce all season with a share in a Community Shared Agriculture, or CSA, such as from Almost Urban Vegetables, also at St. Norbert's Farmer's Market.

--> Sorrel Chive Pesto
1 cup roughly chopped chives (Available at Almost Urban Vegetables at St. Norbert’s Farmer’s Market)
1 cup roughly chopped sorrel leaves (Available at Almost Urban Vegetables at St. Norbert’s Farmer’s Market)
1/2 cup ground almonds
1/2 cup grated parmesan reggiano or padano
1/4 tsp ground black pepper
1/4 + cup good olive oil
pinch salt, to taste

Grind up all ingredients to a paste.  Enjoy as a pesto, as an ingredient, as a sandwich spread, etc.  In pasta, try with chopped tomatoes to bring out the sweetness of the chives.The lemony flavour of the sorrel makes it a great match for chicken, fish, and seafoods.


Foraging for foods on CBC's Weekend Morning Show

On Saturday Morning, I will be presenting the following recipes for CBC's Weekend Morning Show with host Nadia Kidwai.  I'll be using dandelions for which I foraged.  They are considered organic, as, I've never used cosmetic pesticides in my own yard.  They are thoroughly washed, however.  I've used them with Chinese greens (Gai Lan) in one dish, and as a Chimichuri on Wildfire Farms (see what I did there?) beef ribeye.
The reason that I went with wild and foraged flavours is because A Rocha will be holding a guided tour of Winnipeg's West End on Saturday, June 2nd from 2-3:30PM to find edible plants just waiting to be discovered and eaten.  They will meet at St. Matthew's Anglican Church at 641 St. Matthews Ave.  To RSVP, please send an email to   Dress for the weather.
